Maple Glazed Salmon
Pure maple syrup, soy and garlic baked into a sticky glaze. The most-loved salmon recipe we know — and properly Canadian.

Ingredients
- —4 salmon fillets, about 170 g (6 oz) each — Atlantic, Coho or Steelhead all work
- —1/4 cup pure maple syrup
- —2 tbsp soy sauce
- —1 clove garlic, minced
- —1/4 tsp garlic salt
- —1/8 tsp cracked black pepper
Method

Stir the maple syrup, soy sauce, garlic, garlic salt and pepper together in a small bowl.

Lay the salmon in a shallow dish and pour over half the glaze. Marinate 30 minutes in the fridge, turning once.

Heat the oven to 200°C (400°F). Line a baking sheet with parchment and set the fillets on it, skin-side down.

Bake 15–20 minutes, brushing with the reserved glaze halfway through, until the salmon flakes easily and the glaze is sticky and caramelised at the edges.

Rest two minutes, then spoon any pan glaze over the top and serve with rice and something green.
From the counter: Real maple syrup only — the table-syrup kind burns before it glazes. Keep the heat at 400°F and don't be tempted to go hotter.
