What it is
BC-farmed Atlantic salmon: pale coral flesh, fine marbling, and the mild, buttery flavour most people picture when they think of salmon. Forgiving on the heat and easy to like.
How we handle it
It arrives fresh as whole sides and is filleted and cut to order at the counter, skin on and pin-boned unless you ask otherwise.
How to cook it
Grill it, roast it, or pan-sear it skin-down in a hot dry pan. It is rich enough to take a strong glaze and gentle enough for a plain lemon-and-butter finish. Pan-Seared Salmon with Lemon Herb Aioli.
Good to know
Farmed salmon is the steady one — it is on the counter year-round regardless of what the wild runs are doing, which makes it the reliable weeknight fish.
