What it is
Farmed steelhead trout looks like salmon and eats a little gentler — orange flesh, fine flake, mild and buttery with none of the strong oiliness some people avoid in salmon.
How we handle it
Sold fresh, skin-on and pin-boned, cut to order by weight at the counter.
How to cook it
Bake it on a tray with lemon and herbs, or sear it skin-down for a few minutes a side. It cooks faster than salmon, so check it early. Pan-Seared Salmon with Lemon Herb Aioli.
