Halibut Fish Tacos with Lime Slaw
Seared halibut, crunchy lime slaw and warm corn tortillas. Feeds four off a single pound of fish.

Ingredients
- —450 g halibut, mahi mahi or snapper, cut into strips
- —1 tsp each chili powder, cumin, smoked paprika
- —1/4 head green cabbage, shredded
- —Juice of 2 limes
- —3 tbsp aioli or sour cream
- —8 corn tortillas, cilantro, hot sauce
Method

Toss the shredded cabbage with lime juice and a good pinch of salt. Leave it 15 minutes to soften.

Rub the fish with the spices and a little oil.

Sear in a very hot pan for 2 minutes a side — you want colour, not a long cook.

Warm the tortillas directly over a burner or in a dry pan until they blister.

Stir the aioli through the slaw, build the tacos, and finish with cilantro and hot sauce.
From the counter: Any firm white fish works. Sole and sardines are too delicate — save those for the pan.
