Ingredients

  • 450 g halibut, mahi mahi or snapper, cut into strips
  • 1 tsp each chili powder, cumin, smoked paprika
  • 1/4 head green cabbage, shredded
  • Juice of 2 limes
  • 3 tbsp aioli or sour cream
  • 8 corn tortillas, cilantro, hot sauce

Method

  1. 01

Toss the shredded cabbage with lime juice and a good pinch of salt. Leave it 15 minutes to soften.

  2. 02

Rub the fish with the spices and a little oil.

  3. 03

Sear in a very hot pan for 2 minutes a side — you want colour, not a long cook.

  4. 04

Warm the tortillas directly over a burner or in a dry pan until they blister.

  5. 05

Stir the aioli through the slaw, build the tacos, and finish with cilantro and hot sauce.

From the counter: Any firm white fish works. Sole and sardines are too delicate — save those for the pan.
