Halibut Fillet (Fresh - Wild Pacific)

What it is

Wild Pacific halibut is a thick, snow-white flatfish fillet with large flakes and a clean, faintly sweet flavour. Lean and firm, it eats more like a steak than a delicate fish.

How we handle it

Cut to order at the counter from whole fresh fillets, skinned and portioned to the thickness you ask for. We weigh it in front of you.

How to cook it

Pan-roast it in butter and baste, or bake it in a hot oven until it just flakes. Halibut is lean, so pull it the moment it turns opaque. Pan-Roasted Halibut with Brown Butter.

Good to know

Fresh halibut is seasonal and follows the Pacific fishery openings; outside the season the frozen-at-sea fillets are often the better fish.
