What it is
Wild mahi mahi has firm, lean, off-white flesh with a large flake and a mild, faintly sweet flavour. It holds together better than most white fish.
How we handle it
Frozen in portions and kept solid until you take it home. Thaw in the fridge and pat dry before seasoning.
How to cook it
Blacken it in a cast-iron pan with spice, or grill it over direct heat. Because it is lean, take it off as soon as it flakes. Blackened Mahi Mahi.
Good to know
Mahi is the white fish we recommend for the barbecue — it does not fall through the grate the way cod or sole would.
