Blackened Mahi Mahi
A dark spice crust in a screaming-hot pan. Open a window and have the fan on before you start.

Ingredients
- —4 mahi mahi portions, about 170 g each
- —2 tsp paprika, 1 tsp each garlic powder, onion powder, thyme, oregano
- —1/2 tsp cayenne
- —60 g butter, melted
- —Lemon wedges
Method

Mix the spices with a good pinch of salt.

Dip each portion in melted butter, then press it firmly into the spice mix on both sides.

Heat a dry cast iron pan until it's just short of smoking.

Cook 3 minutes a side. The crust should be dark brown, not black-black.

Rest two minutes and serve with lemon.
From the counter: Works just as well on snapper and sole — drop to 2 minutes a side for thinner fillets.
