Ingredients

  • 4 mahi mahi portions, about 170 g each
  • 2 tsp paprika, 1 tsp each garlic powder, onion powder, thyme, oregano
  • 1/2 tsp cayenne
  • 60 g butter, melted
  • Lemon wedges

Method

  1. 01

Mix the spices with a good pinch of salt.

  2. 02

Dip each portion in melted butter, then press it firmly into the spice mix on both sides.

  3. 03

Heat a dry cast iron pan until it's just short of smoking.

  4. 04

Cook 3 minutes a side. The crust should be dark brown, not black-black.

  5. 05

Rest two minutes and serve with lemon.

From the counter: Works just as well on snapper and sole — drop to 2 minutes a side for thinner fillets.
