Ingredients

  • 300 g sushi-grade salmon or yellowfin tuna, cut in 2 cm cubes
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 2 cups cooked short-grain rice
  • Cucumber, avocado, scallion, sesame seeds, nori

Method

  1. 01

Keep the fish cold right up to the moment you cut it. A cold fillet cubes cleanly.

  2. 02

Whisk the soy, sesame oil and vinegar, then fold it through the fish and rest 10 minutes in the fridge.

  3. 03

Season the warm rice with a splash of rice vinegar and a pinch of sugar and salt.

  4. 04

Build the bowl: rice, fish, cucumber, avocado.

  5. 05

Finish with scallion, sesame and torn nori.

From the counter: Only use fish sold as sushi grade, and eat it the day you buy it.
