Sushi-Grade Salmon Poke Bowl
Cubed sushi salmon, warm rice, quick pickles. Built the way we'd eat it on a Saturday after close.

Ingredients
- —300 g sushi-grade salmon or yellowfin tuna, cut in 2 cm cubes
- —2 tbsp soy sauce
- —1 tsp sesame oil
- —1 tsp rice vinegar
- —2 cups cooked short-grain rice
- —Cucumber, avocado, scallion, sesame seeds, nori
Method

Keep the fish cold right up to the moment you cut it. A cold fillet cubes cleanly.

Whisk the soy, sesame oil and vinegar, then fold it through the fish and rest 10 minutes in the fridge.

Season the warm rice with a splash of rice vinegar and a pinch of sugar and salt.

Build the bowl: rice, fish, cucumber, avocado.

Finish with scallion, sesame and torn nori.
