Miso-Glazed Sockeye Salmon
A sweet-salty miso glaze that caramelises under the broiler in six minutes. The easiest weeknight salmon we know.

Ingredients
- —4 sockeye salmon portions, about 150 g each
- —3 tbsp white miso paste
- —2 tbsp mirin
- —1 tbsp soy sauce
- —1 tbsp brown sugar or honey
- —1 tsp grated ginger
- —Sliced scallion and toasted sesame, to finish
Method

Whisk the miso, mirin, soy, sugar and ginger into a loose glaze.

Coat the salmon and let it marinate 15 minutes at room temperature (or up to 4 hours in the fridge).

Set an oven rack about 15 cm from the broiler and preheat it to high. Line a tray with foil.

Broil the salmon skin-down for 5–7 minutes until the glaze blisters and darkens at the edges.

Rest two minutes, then scatter with scallion and sesame.
From the counter: Miso burns fast. If the top colours before the fish is done, drop the tray a rack lower and finish at 200°C.
