What it is
Small cold-water Canadian shrimp, cooked and peeled — sweet, tender, and ready to eat straight from the pack.
How we handle it
Frozen cooked and sold by weight. Thaw in the fridge and drain thoroughly; excess water thins out anything you mix them into.
How to cook it
Fold them into shrimp salad, a shrimp roll, a pasta or a sandwich. They need no cooking at all. Steaming mussels, clams and crab.
Good to know
Cold-water shrimp are sweeter and softer than warm-water shrimp, which is why they suit cold dishes rather than the grill.
