What it is
Sharp, sinus-clearing prepared horseradish with nothing soft about it — grated root and vinegar, and very little else.
How we handle it
A refrigerated jar from the pantry shelf. Keep it cold and sealed; horseradish loses its bite once air gets at it.
How to cook it
Spoon it beside raw oysters, fold it into cocktail sauce, or spread a thin layer under smoked fish on rye. Shucking and serving oysters.
Good to know
Horseradish fades fast after opening, so buy the size you will finish rather than the biggest jar.
