What it is
Sablefish, also sold as black cod, is the richest fish in the freezer — snow-white, high in oil, and so soft-flaked it almost spreads.
How we handle it
Frozen in portions, skin on, stored solid. Thaw overnight in the fridge and handle it gently; the flesh is delicate.
How to cook it
Marinate it in miso and mirin for a day, then broil until the top blisters. Straight roasting with salt works just as well. Miso Black Cod (Sablefish).
Good to know
Sablefish is a cold, deep-water fish, and that depth is where the oil comes from — it is the reason the fillet stays moist no matter what you do to it.
