What it is
Royal White Sturgeon caviar from Northern Divine Aquafarms in Sechelt, BC — sustainably farmed Canadian sturgeon roe with large, glossy pearls and a clean, buttery finish.
How we handle it
Sold in a 30 g tin and kept refrigerated at the counter between 0 and 2.7°C. We hand it to you cold and it should go straight into the coldest part of your fridge.
How to cook it
Serve it chilled, on its own or on blinis with crème fraîche. Use a mother-of-pearl, bone or plastic spoon; metal gives the roe a tin taste.
Good to know
Open the tin only when you are ready to serve, and finish it within a couple of days — caviar loses its clarity of flavour quickly once air reaches it.
