How we handle it
Sold in a 50 g jar and kept refrigerated.
How to cook it
Scatter it over sushi, blinis or canapés, or use it alongside the black roe for contrast on a platter.
Good to know
Rinse it briefly in a fine sieve if you want a cleaner flavour and less colour bleed onto the plate.
