What it is

Pickerel — what most of Canada calls walleye — is a sweet, fine-flaked freshwater fish with pearly white flesh and a clean, delicate flavour. It is a favourite with anyone who finds ocean fish too strong, and it needs little more than butter and a hot pan.

How we handle it

How to cook it

Pan-fry it gently in butter until the flesh turns opaque and flakes at the touch, or dust it in flour and crisp it the traditional shore-lunch way. It cooks quickly, so keep the heat moderate and pull it the moment it is done.
