What it is
Wild Atlantic monkfish has firm, meaty white flesh and a mild, gently sweet flavour. Its boneless tail fillets hold their shape in the pan, making it a good choice when you want a fish with a little more bite.
How we handle it
We have it fresh at the counter and sell it by weight, cut and wrapped to order. The raw fillets in our photographs are from this morning's counter; ask us to portion yours for the way you plan to cook it.
How to cook it
Pan-sear the fillets until lightly golden, then finish gently with butter and lemon. Give the thicker pieces a little longer and check that the centre is cooked through before serving.

Monkfish is a versatile alternative to other white fish in a stew or on the grill. Fresh supply can change, so ask at the counter what is on the ice today.
