What it is
Red king crab legs and claws — enormous shells, dense ivory meat, and a clean buttery sweetness. The showpiece of the freezer.
How we handle it
Cooked and blast-frozen at sea, then kept solid in our freezers and sold by weight. Because they are prepacked, most pieces run over a pound.
How to cook it
They are already cooked, so all you are doing is reheating: steam for six to eight minutes, or split the shells and broil with butter. Steaming mussels, clams and crab.
Good to know
Minimum quantity is from 1.5 lb and above. Shell weight is part of what you buy — plan on roughly a pound of legs per person for a main course.
