Hokkaido Scallops U10 (Frozen)

What it is

The largest scallops we carry, under ten to the pound. Thick, tender, and sweet enough to eat almost raw — a genuine special-occasion shellfish.

How we handle it

Frozen and sold by weight. Thaw in the fridge, then drain and dry them thoroughly on paper towel before they go anywhere near a pan.

How to cook it

Sear them hard in a smoking pan for about 90 seconds a side and finish with brown butter. Nothing else is required. Seared Scallops with Brown Butter.

Good to know

Count numbers refer to scallops per pound, so a lower number means a bigger scallop. U10 means fewer than ten make up a pound.
