Hokkaido Scallops 10/20 Count (Frozen)

What it is

Large Hokkaido scallops, ten to twenty per pound. Delicately sweet with a firm, creamy texture — the size most people picture on a restaurant plate.

How we handle it

Frozen and sold by weight. Thaw in the fridge and pat them completely dry before cooking.

How to cook it

Sear them in a very hot pan for a minute or so a side, or slice them raw for crudo. Crowding the pan is what stops a crust from forming. Seared Scallops with Brown Butter.

Good to know

Count numbers refer to scallops per pound — a lower number means larger scallops.
