What it is
Wild crawfish, cooked and quick-frozen whole. Sweet, tender tail meat with the classic Louisiana flavour still on the shells.
How we handle it
They arrive already cooked and stay frozen until you buy them, sold by weight. Thaw in the fridge and rinse before using.
How to cook it
Serve them cold with cocktail sauce, or reheat them briefly in a spiced boil with corn and potatoes. They are cooked, so heat them through and no longer. Steaming mussels, clams and crab.
Good to know
Most of the meat is in the tail; the claws are mostly for show unless the crawfish are unusually large.
