What it is
Cod cheeks are small, round nuggets of meat from the head of the fish — sweeter and firmer than the fillet, and a genuine Newfoundland delicacy.
How we handle it
They come frozen from the East Coast and are sold by weight from the freezer. Thaw in the fridge and drain well before cooking.
How to cook it
Dust them in seasoned flour and pan-fry in butter until golden, or add them to a chowder near the end. Two minutes a side is plenty. Classic Fish and Chips with Beer Batter.
Good to know
Cheeks are a by-product of the whole-fish trade, which is why they show up irregularly and in small lots.
