What it is
Tiny Spanish nonpareil capers in brine — the smallest grade, and the most delicate. Salty, faintly floral pops rather than a mouthful of vinegar.
How we handle it
A jar from the pantry shelf, shelf-stable until opened and then kept in the fridge under their brine.
How to cook it
Scatter them over gravlax, stir them into a lemon butter sauce for white fish, or fry them briefly until they burst open and crisp. Gravlax Crostini with Capers and Dill.
Good to know
Nonpareil is a size grade, not a brand — smaller capers are firmer and less sharp than the larger grades.
