What it is
Live blue mussels — small, dark-shelled, with plump orange meat and a clean briny flavour. The cheapest good dinner in the shop.
How we handle it
Kept live and cold at the counter and sold by weight. We bag them loose so they can breathe on the way home.
How to cook it
Steam them hard in a covered pot with butter, garlic and white wine for five minutes. Discard any that stay shut after cooking. Mussels in White Wine and Garlic.
Good to know
Store them in the fridge in an open bowl under a damp cloth, not sealed in plastic or sitting in water — they are alive until you cook them.
