What it is
Black lumpfish roe from Quintessence Caviar — small, crisp pearls with a sharp briny pop. The workhorse roe for garnishing.
How we handle it
Sold in a 50 g jar and kept refrigerated.
How to cook it
Use it on canapés, deviled eggs, sushi or a swirl of crème fraîche. Add it at the last moment so the colour does not bleed.
Good to know
Lumpfish roe is dyed, which is normal for the product but means it will tint anything pale it touches.
