Click to zoomArctic Char Fillet (Fresh - Farmed)
What it is
Farmed Arctic char sits between salmon and trout: pale orange flesh, a fine flake, a clean delicate flavour, and just enough fat to stay moist on the heat.
How we handle it
Sold fresh, skin-on and pin-boned, cut to order by weight at the counter.
How to cook it
Sear it skin-down in a hot pan — the skin crisps beautifully — or roast it whole-sided with lemon and dill. Pan-roasting a thick fillet.
Good to know
Farmed char offers steady quality while keeping the delicate character the fish is known for. Its smaller flakes and gentler flavour set it apart from Atlantic salmon.
